Kesari or Sooji ka halwa is a regular sweet made in every south Indian home. Be it an occasion or be it a guest coming for breakfast or somebody's birthday.... you will find kesari in the menu. Regular halwa is always served. How about trying flavoured kesari. There is a restaurant in our locality. The quality of food is really good out there. So if at all we have any plans to eat good vegetarian food outside then this is our fist spot to be picked. The best part is their breakfast menu. Almost every time they serve kesari for sidedish but not the plain one. They are always flavoured with seasonal fruits. This time they served mango kesari and it tasted so good. My younger one who is crazy about mangoes fell in love with it
Same as regular halwa or kesari, procedure is exactly the same except that the seasonal fruit puree is added in the end before finishing off the dish. Tried it and it was complete satisfaction to relish the entire bowl :)
Serve option... Warm
This is what u'll need....
Sooji / Rava - 1/2 cup
Sugar - 1/2 cup or little less
Mango puree - 1/2 cup
Water - 1 cup + 1/4 cup
Ghee - 2 tbspn
Cashews - 5-7 nos

Here is the stir....
- Add rava / sooji to a heavy bottomed pan and stir on low-medium flame. Keep stirring often to avoid burning the rava
- Once done remove rava onto a plate or newspaper
- Heat ghee in the same pan
- Add broken cashews to it and fry till golden
- Measure 1 and 1/4 cup of water to the pan
- Meanwhile scoop out mango flesh inti a mixie jar
- Pulse the mango into a fine puree
- When water comes to a boil reduce the flame and stir in the rava while continuously stirring. Stirring is a must to avoid any lumps
- Once all the rava is mixed increase the flame and cook for a few more seconds till all the water is absorbed
- Add sugar to the pan and stir once again to incorporate
- Finally add mango puree and mix it around for a minute or little more. Sprinkle cardamom powder
- Keep stirring the mixture till mango is evenly distributed into the halwa
- Add fried cashews to the kesari and give it one final stir
- Switch off the flame and transfer the contents to another bowl
- Serve warm and enjoy
- When roasting rava keep an eye on it as they tend burn easily
- Keep stirring when adding rava to hot water to avoid any lumps
- After adding mango puree the consistency of kesari will change again. Keep stirring to get correct consistency
