I love carrot cake... the smell of cinnamon, the freshness of soft cooked arrots, the taste of brown sugar.... It is dense yet soft and has a wonderful texture. I love it but my family is not a big fan of it. Couple of ties I made the cake I was the one to finish it except for a few slices that they try. Mug cake option has given me a good chance to have my favourite whenever I want and all by myself :)

This is what u'll need....
All purpose flour - 3 tbspn
Grated carrot - 2 tbspn
Brown sugar - 2 tbspn
Cinnamon powder - a pinch
Milk - 3 tbspn
Oil - 2 tbspn
Baking soda - 1/8 tspn
Vinegar - 1/4 tspn
Raisins - few
Grated carrot - 2 tbspn
Brown sugar - 2 tbspn

Baking soda - 1/8 tspn
Vinegar - 1/4 tspn
Raisins - few
Here is the stir....
- Spoon in all purpose flour into a large microwave safe mug
- Add 2 tablespoons of grated carrots into it
- Spoon in brown sugar. Adjust to suit your taste. I like it mild sweet
- Add a pinch of cinnamon powder
- Pour 3 tablespoons of milk
- Add 2 tablespoons of oil into the mug
- Measure 1/8 teaspoon of baking soda and add it to the mug
- Spoon in 1/4 teaspoon of vinegar into the mix
- Add a few raisins if you like
- Mix it all thoroughly using a fork
- Top it with some raisins
- Pop it into the microwave for about a minute. Then keep adding extra 10 seconds and check for doneness after every interval. Mine took about 1 minute and 40 seconds. Every microwave is different so keep an eye to check it
- Serve hot and enjoy
Note:
- Adjust sugar as per your taste
- Adding raisins is completely optional
- If you dont have brown sugar you can add white but the taste will be a little different
