Crispy baby corn fry

Baby corn is so yummy and such a favourite to all. Loads of ways in which one can enjoy these cuties. We love it deep fried, in gravies, as starters, as pizza toppings and a lot more ways. This version of baby fry turns out very crispy and the best part is it is very very easy to pull the recipe together. The fried baby corn versions I have shared in my blog are the battered ones - Baby corn golden fry and Babycorn-65. They are great to taste and this recipe here makes yummy baby corn fry too but using just dry ingredients

I wont say its a kids favourite.... well it is everybody's favourite. Crispy, spicy coating on baby corn gives it a great taste. Bite sized pieces make it  more interesting and easy to eat. It is so addictive that no one can have just a few. It is gone as soon as it is served and there is always a demand for more

The taste is all about the spices you use to jazz up the babycorn pieces. I have used about 4-5 spices but you can top up the spice-list with your favourites. Spice mix,  flour and babycorn are the only stuff needed to make this.... and ofcourse oil. I cook the baby corn ahead of time and let it cool down. Once I need to make the fry I just add all ingredients to a bowl and toss the baby corn pieces too so that its well coated. Deep fry them and thats it they are ready to eat


Penne pasta in pink marinara sauce

The name was different and so was the taste. I saw this recipe on the internet last week and decided to make it for dinner as the recipe called for very basic ingredients which I had in the kitchen pantry. My kids are a big fan of white sauce pasta so that is what is often made at home but I love spicy pasta, tomato pasta, pepper pasta and more.... When I caught a glimpse of this recipe I felt it was as per my liking and I would sure enjoy it. Gave it a try and the kids loved it too. They fell in love with it that I made some again for breakfast next morning

The recipe gets done in 10-12 minutes. Cook the pasta in one pan and stir up the sauce in another at the same time. Mix everything together and you are done to enjoy a tasty bowl of this super yummy pasta. It is perfect to taste with a little bit of tanginess from the tomatoes, a little bit of creaminess from the cream and cheese and the perfect spiciness from the chilli flakes and herbs. Sounds simple but the taste was filled with the perfect proportion of all that would make the dish perfect

Vanilla cake in pressure cooker

My mom first started making cakes in a pressure cooker. She used to make it often and we would be excited and jumping around to get the first bite of the freshly baked warm cake. During childhood, most of the days used to feel like an occasion as some neighbour or other friend will always be there in the afternoons chit-chatting and making or doing something. We used to have a good time and the days used to be so lively. Neighbours used to come home often, sit and chat for long times, friends used to stop by to play and we used to have all sorts of fun. This cakes brings back a lot of memories :)

I started making cake in oven so did not try to make in pressure cooker any time. I have a few friends who have been asking for the procedure to make cake in cooker. Every time my friends ask me I would call my mom, get the recipe and then again call my friends back to explain everything. I have done this so many times now that I understand it is high time I jot it down and make a post so that the recipe stays in the tip of my hands always

The use of cooker makes the cake taste a little different around the edges if you let it brown a little. I love the browned edges and really love biting into it. They taste really wonderful. I tried making it at home and enjoyed every bit of whatever I got :) The kids loved this version too



Butter Naan without yeast

Homemade naan is a great option to make your simple dinner a little more exciting. Naans go really good with a lot of gravies and the options are endless. Also you can make it with different topping flavours .... simple butter or garlic or onions seeds or sesame seeds. Our family loves homemade naan and we enjoy it every time its made. I usually make the yeast version -> Naan using yeast. They turn out perfect every time

Sometime back I eyed another recipe of naan made without using yeast and the best part its made without the dough waiting/resting time. This sure is a saviour when you are running short of time or have sudden guests. just mix everything together and knead it into a soft dough. Rest for just 15 minutes (if you have) and you can roll them out and cook till done

I kept this recipe in mind for a long time and finally got a chance to try it. Loved the outcome. It turned out very soft and the taste was great too. We enjoyed it with some chicken curry and it tasted perfect. The recipe is sure a keeper

Simplest chicken nuggets

Chicken nuggets are every kids favourite. I make it my mincing meat and then adding egg and spices to it. Finally they are shaped and fried till done. I also make it using the breading method which tastes very different from the minced style. They both taste very different and also very good

This recipe calls for very simple ingredients for marination and then a simple breading technique. You can as little or as many spices when marinating the chicken. Here I have kept it very very simple and it turned out just great. A simple trick to make your kids happy


Eggless Caramel Pudding / Creme Caramel

I posted a creme caramel recipe(by martha stewart) that I tried some time back. It was perfect to taste and I loved the texture too. Though everything was great about the recipe I ended up making an eggless version too. This recipe was not looked out on purpose but just came up when I looking for something else on youtube. When I saw the post name I thought I should have a look at it. The recipe was so very simple that I could not resist making it immediately and yes it turned out awesome too. It uses agar-agar to get the pudding effect and the dessert was really creamy

Caramel pudding or creme caramel is a perfect dessert to serve if you have guests coming over and you have some time to do a little prep work. This recipe works like a charm and you in luck if you are looking for an eggless version. Mix ingredients up and then boil the mix for a while. Finally set it on hardened caramel and you are good to go. Check the pudding in 30 minutes and enjoy the soft, chilled and creamy dessert

Since this dessert can be made a day ahead, you can be relaxed when you plan dinner for a happy get-together with your wonderful group of friends

Pav buns made in just 1 hour / 1 hour rolls

I have been enjoying making my own bread and buns and pav for quite a while now. Whenever I make some over the weekend and I have a chance to visit my mom, I bake some bread for her too. She loves the homemade version so whenever she plans to make pav bhaji she asks me to make some pav for her. Sometime back when she wa about to come to our home she just called up and asked if I could make some pav for her for the next day so that she could use it for breakfast. I had very little time... say just about an hour and a half which was not enough to make the buns. I told her that it would take time and it will not be possible. But my mind was not happy to deny her request so quickly browsed my pinterest saves to check out the 1-hour dinner that I have always eyed on

Got this recipe that I had saved on pinterest long back and finally got a chance to try it. It was pretty quick to make and turned out very soft and feathery. My mom liked it so much that day. She was happy that I made it for her even after I said I wont be able to

Chocolate in a rose

What do you do when there is some leftover pizza dough.... We usually end up making some soup-breadsticks or thin crisps or small buns. Once we tried this beautiful roses. Saw this pin on pinterest about various ways to fancy the regular dough to make it look more interesting. There were so many options to look for but only a few stayed in my mind. This is one among them

When we had very little dough left, we just split it into four and made a very small treat for all of us.... just one small bite-size for each of us. Instead of folding it with extra dough in the middle we decided to use some chocolate and cherries that we had in hand. It turned out to be a fun snack for the kids. They loved the way it looked and tasted too

I have used little of pizza dough made using 50% whole wheat flour and 50% all-purpose flour. You can use the same ratio or 100% whole wheat flour or 100% all-purpose flour. The dough will have a little bit of salt but that contrasts really well with the chocolate inside. We loved it that way

Sundried Potato chips.... brings back nostalgic memories

Potato chips are an all-time favourite everywhere. These potato chips are very different from the regular chips that we make. The usual potato chips are made by just slicing the potatoes and frying them in hot oil. These sun-dried potato chips are way different in the making and also in taste. The best part is that you can make a big batch of dry chips and store them. Whenever you feel like eating them just heat some oil and fry a handful chips. Sprinkle some red chilli powder and enjoy

These sun-dried chips bring in a lot of memories of childhood when my mom using to make very big batches of these and would store them in big dabbas. We kids used to help in drying them. Mummy used to blanch the slices and pass on the container and we used to used to lay them on big plastic sheets. It used to be fun sitting under the sun, not realising the heat and instead enjoying, chatting and arranging the slices. In fact it was like a little game for us. We used to try to do it as fast as we could to see who could do more. Once all would be done we would wait till evening to do the next job. Peeling the potato chips which would have stuck to the sheets. It used to be fun .... we used to enjoy that part too. The next day the chips would be dried again under the sun and then once they would very dry we would stash them in big containers. It is a fond memory that makes me smile even now

Couple of weeks back when my mom was telling some childhood stories of mine to my elder kiddo she mentioned about these chips that she would make for us and how we used to fight over it . I was also there listening to their lively conversation and this part interested me. It brought back so many memories that we got engrossed in it for quite a while. The kids were too excited and they enjoyed their grandparents time a lot that day. Even after starting from my moms place that day I continuously got reminded of these sun-dried potato chips which I used to love so much during my childhood days. On the way back home I made sure to stop at the sabjiwala and pick a decent batch of fresh potatoes which were perfect to make the chips. As soon as I reached home called up mom and checked with her on how to make it. She told me everything but in the end added that this was not the right time to make it and I should wait for a month or little more to let the outside temperature soar a little higher. I did not want to wait so long so convinced her saying I would try a small batch and if everything works fine I would continue making a bigger batch. It turned out perfect and the kids fell in love with it. I made another batch last week and they are yummmm


Mug pizza

MUG PIZZAAAAA/ Bowl pizza as I made it.... Have you tried this???? If not then do give it a try and am sure you will fall in love with it? Pizza made in 5 minutes .... I know it sounds unbelievable but if you want to treat yourself individually some day without taking much pains of making and cleaning as well then this one is just for you. I first thought to try mug cakes and other mug stuff after I saw a few videos by Gemma from Bigggerbolderbaking. I love the way she talks and makes stuff and the way she makes us feel that cooking is probably the easiest job in the world if you are really creative. She has so mannnnnnnnnyyyyyyy recipes for mug foods that you will be shocked if some of them can really be made in a mug. Yes I have gone through many of her recipes ...... if not for the recipe then atleast to check out the great ideas that she has

I was looking for some video related to embroidery work when I chanced upon this video under the suggested options. It was almost noon time and I hadnt made anything for lunch till then. The video snapshot of this individual serving meal looked inviting and I decided to spend a couple of minutes watching it.... but guess what.... I ended up watching and also making the mug pizza as well. It sounded so easy and delicious that I could not resist myself in making some immediately. All the ingredients were available in the kitchen pantry and so just 5 minutes and I had this hot and yummy mug pizza/ bowl pizza right in front of me. Every bit of it was so delicious that I finished it in no time. Worth a try and yumminess guaranteed

Creme Caramel/Caramel pudding using egg

I love creamy desserts and I can enjoy them anytime. Creme caramel/Caramel pudding is my favourite and I have enjoyed it always. The ones served at big restaurants. The first time I had this was at a restaurant in mangalore and was instantly in love with it. The creaminess from the dessert, the slight bitterness from the caramel and the chilled was in which it is served add up all to make it a rich dessert. This has been on my to-do list for quite a while now and finally picked up martha stewarts recipe to give a try. I tweaked it a little to adjust the flavours to suit my taste

The recipe is very simple except that you have to have patience to wait till it is ready to eat. I could not resist at all so kept checking every half an hour to see if they were ready to eat :) It turned out great and the taste was perfect. No egg smell as I doubted and the creaminess was just perfect. I used the bain-marie to make the dessert as opposed to steaming which was suggested in some videos

If you have guests coming home and you have a days prep time then I would suggest you try this to impress your guests. They will sure love it

Couple of days after I tried this recipe, I got another recipe from the internet... i think rajshri videos. The recipe did not use eggs and was quicker and simpler to make than this one. I tried that recipe too and that was great too. Will post that recipe soon... for the eggless version of caramel pudding

Simple vanilla choco chip muffins

This is a recipe that I tried from the back of a box of choco chips. We bought choco chips to make some cookies but when my kids started helping me in the kitchen they found a recipe on the back side of the choco-chips box that said muffins. Immediately they changed their plan from cookies to muffins. It was difficult to convince them from not making so I thought why not give it a try. Good that we tried because it turned out perfect and exactly the way my kids like

The recipe was actually for chocolaty choco-chip muffins but we made vanilla choco-chip muffins and the reason was very simple......... we ran out of cocoa powder :)  The kids loved it so much that they packed some for their friends at school too. Its nice to see that they want to share and enjoy

We made these muffins long back but could not post the recipe. Time to make it again I think :)
