Quick Potato wedges to make your kids happy is always inviting. We usually enjoy baked potato wedges but this fried version is also great when you run out of time. These are so addictive that you cant just stop with one. Serve them with mayonaisse or ketchup to tune up the taste
Spice it more or less as per you taste and enjoy it as an appetizer or a perfect tea-tme snack. Kids will also love it as their perfect after-school snack with their warm cup of milk
Serve option... Hot with mayonaisse or ketchup
This is what u'll need....
Potatoes long - 3
Corn Flour - 2 tbspn
Mixed herbs - 1 tspn
Red chilli Flakes - 1 tspn
Oil for frying
Salt to taste

Here is the stir....
- Wash and peel potatoes. Peeling is optional. My kids dont like the peel so its always when we make it
- Slice the potatoes into half lengthwise. Again cut them into 3 or 4 pieces lengthwise
- Boil water in a saucepan and bring it to a rolling boil
- Add potatoes and salt to the pan and cook for about 2-3 minutes or till potatoes are 3/4th done
- Drain excess water using a strainer and keep it aside to cool to room temperture before you start handling it
- In a wide bowl add 2 tablespoons of corn flour
- Add a teaspoon or more of mixed herbs
- Add a teaspoon or more of red chilli flakes
- Add salt and pepper to taste
- Mix all this together so that the spices get mixed evenly
- Put a few slices of potatoes into the cornflour mixture and coat it all over the slices. Shake off excess flour and place the pieces in a plate. My kids were helping me out so there was too much of a flour coating which we shake off much. Its just a slight coating that is needed. When I make it, I usually slide in all the pieces into the bowl and give a gentle toss to get the spices coated
- Heat oil in a pan
- Slide in a few slices of potatoes into the hot oil
- Fry till they are golden brown
- Once done, remove them from oil and drain them on paper towels to remove excess oil
- Serve hot with mayonaisse or ketchup
Note:
- Make sure most of the water is drained from the potatoes before you add them to the flour
- Add more or less spices to suit your taste
- Fry in medium hot oil only for a little while and its done
