Jam cookies... very simple and very interesting for kids

Jam cookies are fun to make, great to look and yummy to eat. My kids enjoyed making it. They had so much fun in shaping their cookies and filling the jam. They couldnt wait to get them to room temperature :) They were in such a hurry to show it to their friends and share a few with them. You could have seen those proud little shiny eyes when they boxed it to their friends house as a surprise for them. Love their thought and kind act of sharing

The cookies have a little crunch with a little softness to bite in with the juicy jam. They look so cute with a beautiful colour in the middle. We loved it. Next my kids are planning to take them to school for their classmates.... and especially made by them:)

Serves... makes 12 cookies
Serve option... Can be stored in an airtight container for a few days

This is what u'll need....

All-purpose flour - 1/2 cup + 1 tbspn
Butter - 2 tbspn
Powdered sugar - 2-3 tbspn
Vanilla essence - few drops
Baking powder - a pinch (optional)
Mixed fruit jam - 2 tbspn

Here is the stir....

  • Leave butter outside on the kitchen counter to get it to room temperature. If you are in a hurry or forgot to keep the butter outside them you can put it in the microwave for just 5-7 secs. Dont melt it ... make sure to just soften
  • Once the butter has softened, put in a wide bowl
  • Measure in powdered sugar to this bowl
  • Use a hand blender or a fork to cream the butter and sugar together. Beat it for a few minutes to make it light and fluffy
  • Once done add flour, baking powder, vanilla essence to it

  • Give it a gentle mix with a spoon and bring it all together. If too dry add a few drops of milk and if too wet sprinkle little flour to bring it all together into a very soft dough
  • Pinch out a little dough and make it into a ball. Make a dent in the middle for the jam
  • Repeat with rest of the dough and place them on a baking tray
  • Bake it in a 180 degrees preheated oven for about 15-20 mins. Mine was about 15 mins
  • Remove the tray from oven and transfer the cookies to a cooling rack

  • Take jam in a bowl and mix it with a fork till it become runny kind
  • Once cooled spoon in jam in the dents and make them look cute
  • Store them in an airtight container to keep it fresh. Ours were long gone before we could think of storing them
  • Enjoy the cookies with your kids and get their hugs and kisses :)

Note:
  • Cream butter and sugar till fluffy
  • Adding baking powder is optional
  • Whisking jam with a fork makes it easier to handle
