Brinjal fry

A simple everyday fry should be simple to make too. This recipe down here is a part of everyday menu and goes good with rice or rotis


Serves... 2 ppl 
Serve option... Hot rice or chapathis

This is what u'll need....

Brinjal - 4 medium
Onion - 1 small
Garlic - 4-6 cloves(big)
Grated ginger - 1/2 tbspn(optional)
Red chillies - 3
Oil - 1 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Salt to taste

Here is the stir....
  • Heat oil in a pan and add mustard seeds, urad dal
  • Toss in finely sliced garlic and sliced ginger into the hot oil. Stir for about a minute till you can smell the aroma of ginger and garlic
  • Break red chillies into 2 and add it to the oil
  • Add thinly sliced onions to the pan. Saute the onions till it turns soft
  • Chop brinjal into small pieces and stir for a couple of minutes
  • When cooked half way through add salt to the brinjal
  • Cook on medium heat till the brinjal turns soft and is cooked through
  • Serve hot with dal and rice and enjoy
