This was a recipe that I came to know of from a tv channel. Not now but a very long tie ago. It was so simple yet so deliciously tempting that I knew I got to give it a try. Then as my wishlist goes on increasing my tiny brain keeps on forgetting most of the time. It was there in my mind giving an appearance nice in a while and then finally got a chance to make on a nice rainy day a few months ago
Potatoes are so delicious in every form and this one is a crown to it. My kids loved it more than I thought. Made a small batch to try out and it was too good. Next time have to double the recipe else I wont even get to taste it :)

Potatoes - 3 big
Egg - 1
Corn flour - 1 tbspn
Oil for frying
Pepper - a pinch
Salt to taste
Here is the stir....
- Take a wide bowl. Grate the onion into it
- Peel the potatoes, wash them and grate them into the bowl
- Transfer the grated onion and potatoes to a thin cloth
- Pull the ends of the cloth to make it like a hanging pot. Twist it a couple of times and gently squeeze out the excess liquid. Squeeze out as much as possible
- Transfer it back to a bowl
- Crack open an egg into the bowl
- Add a tablespoon of cornflour, pepper and salt to the bowl. Mix everything together gently to form a sticky mass
- Heat 4-5 tbspns of oil to a pan
- Spoon in a tablespoonful of the mixture into it. Pat it down gently to make it look like a mini dosa/pancake
- Cook on low-medium flame till golden brown crust forms. Flip over and cook on the other side too
- When done remove and drain on paper towels to take off the excess oil
- Serve hot and enjoy
- Use little salt only
- Dont overbrown the latkes else they turn bitter
- Try cooking on low-medium flame to cook through. Towards the end increase the flame a little to make it crisp
