I had to use up the custard powder that was lying in my fridge for a pretty long time. Thought to make something else other than regular fruit custard which is my favourite though. Saw a recipe on tv that said custard powder cookies and I was totally in. Didnt get a chance to completely store the recipe in my mind but bits and pieces of info did fall into my brain
Its simple to make like any another cookie. It has a beautiful aroma because of the custard powder, a perfect crunch and a beautiful taste. Loved it a lot. My kids who dont like custard like this instead :)

This is what u'll need....
All purpose flour - 1/2 cup
Custard powder - 1/4 cup
Powdered sugar - 1/4 cup
Butter - 1/4 cup
Tutti - frutti - 2 tbspn
Baking powder - a pinch (optional)

Here is the stir....
- Spoon in unsalted, room temperature softened butter into a bowl. Room temperature butter will help it blend perfectly with the sugar
- Measure in powdered sugar into the bowl
- Mix cream and butter well and beat it(manual or using hand blender). Blend it for a few minutes till the butter turns creamy and fluffy
- We need to sieve custard powder, baking powder and all-purpose flour into the bowl
- First add custard powder and baking powder
- Measure in flour into the siever
- Add tutti frutti to the bowl
- Mix it all together with gentle hands. It will first look crumbly but then soon will start coming together. If it is falling apart a lot then you can use a few drops of milk at a time and see if it help. I needed about a tspn of milk to bind it
- Make the dough into a log shape and wrap it with cling film or a thin plastic sheet
- Rest it in the fridge for about an hour
- Remove it from the fridge and slice it carefully into 1/2 inch thick rounds
- Place them carefully on a baking tray
- Bake in a 180 degrees preheated oven for 15-20 mins. Mine took 17 mins
- Remove from oven and cool the cookies on a cooling rack
- Transfer it to an airtight container to keep it fresh longer
- Serve these yummy cookies to your loved ones and enjoy
- Cream butter and sugar till very airy and fluffy
- When adding the flour and custard powder, mix gently with very gentle hands
- The cookies will be sot when you remove them from the oven. Once they cool, they will get the perfect crunch and texture
