Aapam...my kids favourite

Aapam is my kids favourite these days. Mu younger one is a very very veryyyyy big fan of aapa. Dont know how he became so crazy. He loves aapam with coconut milk and my elder one loves cheese aapam. Making aapam is so easy that I dont heistate when he insists me in making them for his breakfast or dinner

Soaking and grinding similar to dosa batter is the process. Once fermented the batter will be ready to use
  
Serves... 2 ppl
Serve option... Hot with coconut milk

This is what u'll need...

Raw rice -  1 cup
Urad dal - 1 tspn
Coconut - 1/8th of coconut or 3 tbspn grated
Sugar - 1 tspn
Salt to taste

Here is the stir....
    • Measure 1 cup of rice into a bowl
    • Add a teaspoon of urad dal to the rice
    • Wash and rinse. Pour sufficient water and soak the rice-dal mixture for about 3-4 hours
    • Drain the water and transfer the rice and dal into a blender jar
    • Slice coconut pieces and toss it into the jar
    • Pour required amount of water and grind it till fine
    • Add half a teaspoon of salt and one teaspoon of sugar to the batter. Mix the batter thoroughly. The batter will have a consistency thinner than that of dosa batter
    • Let it sit covered and ferment for 8 to 10 hours or preferrably overnight
    • Heat aapam pan on medium heat
    • Pour half a ladleful of batter
    • Turn the pan in circular motion so as the batter runs around and cover the pan
    • Cook it covered until done. If making cheese aapam then add grated cheese on top of the aapam few seconds before the aapam is done. Cook covered till cheese melts
    • Remove when done and serve hot with coconut milk
                                            Note:
                                            • Keep the batter overnight to get perfectly fermented batter
                                            • Sugar gives a nice flavour to the aapam though it purely optional to add
                                            • Cook the aapam on medium heat
