Baby pizzas... the way niks named it...


We all love pizza in my family. Nobody says no whenever there is a chance to eat :) Last time when we went to a restaurant for my last year bday dinner we got a chance to eat these mini pizza-style appetizers which my kids fell in love with. It was cute to look at and yummy too. They had made it out of french bread loaf. We sure ate a lot of servings of this beauty. 

Niks, my elder kiddo wanted me to try it at home. He laid it out simple - just cut some bread, put some veggies, top with a lot of cheese and finally bake it. I was watching his cute style of explaining when we cornered me to make it for snack that day. It has been on our snack list ever since. I feel there is not much to work on and my kids get to help me a lot on this one. They love to keep popping it in their mouth till all the minis disappear from the plate. I guess it is a fun snack so I let them enjoy it quite often.



I am sure french loaf tastes best but we dont buy it very often. So for us regular bread suits best. A few slices and we have a little pile to eat.  It serves wonderful at kids-party as appetizers

Serves...  3 ppl
Serve option... Hot

This is what u'll need....

Bread slices - 3
Capsicum - 1/2
Tomato - 1 medium
Onion - 1 small
Paneer -1/2 cup
Cheese - 1/4 cup shredded and 1/4 cup block
Pepper to taste
Salt to taste

Here is the stir....
  • Cut each bread slice into four parts so that they form small bit-size rectangles
  • Preheat the oven at 180 degrees 
  • Cut cheese into thin long stripes so that you can lay them on the bread slices. You can grate them if you want but I like my kids to help me cut them into slices so that they can have fun. Arrange these on the bread slices to have a cheesy base
  • Meanwhile cut capsicum, tomato, onion into very small dice shape. I prefer not to use the juicer part of the tomato as they make the bread soggy. Dice paneer into slightly larger cubes
  • Line up all the bread pieces in a plate so that they make a large square. Now ask your kids to help spread out the veggies evenly on all the slices. Follow this with spreading paneer on top. Sprinkle a little salt and pepper for taste
  • Add grated cheese on top. Now transfer the pieces to a baking tray

  •  Slide in the tray into the oven and let it all work till you see the cheese melting, It usually takes us about 12-15 mins. Let it sit for a minute before you slide them out to a serving plate
  • Enjoy hot little cheesy bites for a super simple and delicious snack to enjoy making and eating with your kids



Note:
  • Dont use too much of veggies. A little should go a long way
  • A dash of salt and pepper brings out the flavors
  • Sometimes we saute the veggies and paneer for a few seconds in the pan with a little butter,salt, pepper and then line them on the bread slices. That too tastes wonderful. Both have their unique tastes and we love both styles
