Mushroom sandwich

I have always loved mushrooms but for the kids it has become a recent favourite. If some veggie is their favourite then no wonder its made multiple times in a short while. They want it in almost everything they eat. Six to eight months back they used to make faces when I would make mushroom but now I have to run away from making it too often ;)

This sandwich is a very simple recipe with not much of a spice touch too. The kids love it for a simple snack or even as breakfast. If its heir after school snack then no worries at a.... mamma can just lay down their plates and not bother about it getting finished in no time. Sandwiches are always a welcome and this one is no less

  


Serves... 3 ppl
Serve option... Hot

This is what u'll need...

Bread slices - 6 
Mushroom - 8-10 buttons
Onion - 1
Capsicum - 1 small
Tomato - 1 small
Cheese - as needed
Oil - 1 tbspn
Pepper to taste
Salt to taste

Here is the stir....
  • Heat a tablespoon of oil in a nonstick pan. Clean and slice mushrooms into small slices and toss it into the pan. Saute it for a couple of minutes
  • Chop onion, capsicum and tomato into small pieces and add it to the pan. Cook on high flame for about a minute or two continuously stirring it

  • Dont overcook the onions and capsicum else they turn soggy. Crisp veggies taste good in this sandwich. Transfer this to a separate bowl
  • Season it with salt and pepper

  • Grate cheese into the bowl and give it a good toss

  • Spoon in the mixture on a bread slice and spread it evenly
  • Place another slice of bread on top and drizzle a few drops of oil and place in the sandwich toaster

  • Grill it in the sandwich maker till golden and slightly crispy on the outside
  • Remove the sandwich to a plate and cut it diagonally to make 2 triangles
  • Serve hot with some spicy chutney and enjoy


                                      Note:
                                      • Dont overcook the veggies. Just cook them on high heat for a minute or little more
                                      • Cheese is optional
                                      • You can add some red chilli flakes and mixed herbs for extra flavour
