Mushroom Pepper fry



Mushrooms stir-fried with onion and capsicum with just a hint of salt and lot of pepper is all that you need to make this super-simple and quick side dish for chapathis or phulkas. We love the simplicity of this dish and the flavours that we get o enjoy. It takes just about 15 minutes to get this ready so it is a plus to have this recipe handy when you want to make dinner in a jiffy

My kids like it cause it doesnt have tomatoes. Oh yes they would start picking tomato chunks from the curries and sabjis that are served. They are o if the tomatoes are well mashed in the gravies else the drama starts. So this recipe is good for them and for me too :) 


  
Serves... 4 ppl
Serve option... Hot with chapathis

This is what u'll need...

Mushrooms - 10 - 12 nos
Ginger grated - 1 tspn
Grated garlic - 1 tspn
Onion - 1 large
Green chillies - 2
Capsicum - 1
Pepper powder - coarse - 1 tspn
Jeera / Cumin seeds - 1/2 tspn
Salt to taste

Here is the stir....
  • Heat oil in a flat pan and add cumin seeds to it
  • Toss in grated ginger and grated garlic. Stir this and let it start spreading their aroma. Should not take more than 30 seconds on low flame
  • Slice the onions thinly and toss them into the pan. Saute this for a few minutes till the onions start getting a little soft
  • Slit a couple of green chillies and toss them into the pan
  • Slice the capsicum into thin slices but not very thin. A little crunchy bite from the capsicum tastes wonderful
  • Toss it all around for 2-3 minutes
  • Thinly slice the mushrooms and add it to the sauteed onion and capsicum mix
  • Add coarsely ground pepper. It doesnt have that unique flavour when fine ground pepper powder is used. I used my old-fashioned mortar and pestle style to crush the peppercorns coarsely
  • Saute it for a few minutes till mushroom turns a little soft
  • Time to add salt. Sprinkle salt as per your taste. Give everything one good stir and cook for about a minute or little more. Thats it... fry is ready
  • Serve hot with soft chapathis or phulkas to serve a simple and satisfying dinner

                                      Note:
                                      • Dont cook capsicum for too long initially. It gets cooked after adding mushrooms also
                                      • Add salt towards the end
                                      • Add freshly coarsely ground pepper for the best flavours
