Chicken fry, chicken sides, chicken gravy anything is welcome on my elder kiddos lunch menu. He loves chicken that he makes sure his grandma makes it in his favourite way every time he visits her. Oh yes... ny mumma will sure make his favourite gravy whenever he is at their place. "Paama (thats how he calls my mom)... kaarama... unga style chicken gravy pannunga please"... this is what he always has to ask for lunch. Now thats a long story out there. Coming back to the recipe of this chicken fry whih is one of his favourites too.... let me tell you it is damn simple

This is what u'll need...
Onion - 2
Boneless Chicken pieces - 1 cup
Turmeric powder - 1/2 tspn
Curry powder / Sambar powder - 1 tspn
Pepper powder - 1 tspn
Salt to taste

Here is the stir....
- Peel onion and thinly slice them into long pieces. I used about 2 medium onions. Saute this for about a minute
- Add salt to taste and let the onions cook for about 3-5 minutes on low flame. Onions should turn slightly soft and translucent
- Wash and clean the chicken. I have used bite sized boneless pieces as my kids enjoy it that way
- Spoon in turmeric, salt and pepper powder into the pan. Toss and saute for a couple of minutes. Keep in mind that we have already added salt to the onion
- Now add about a teaspoon of curry powder to the pan and cook on medium till the raw smell of the curry powder is no more
- Add about 3-4 tablespoons of water to the pan ans give it a good stir
- Cook it covered on low for a few minutes. Remove the lid and then fry till water evaporates
- Transfer it to a serving plate or bowl and serve hot
Note:
- We are adding salt twice so make sure you dont end adding too much
- Adjust spice to suit your taste buds
- Cook onions slowly to get a soft texture. Cooking chicken will not take a long time
