Deluxe Veggie Pizza .... 50% Whole wheat for a better tasting option


Homemade pizza is the best. This is what me and my family believe. Make it the way you want. Toppings are also your choice... we heap it up with all our favourites :) It counts less on your pocket and the best part is its fresh out of the oven. Its fun time at home when its  pizza night. Lots of talks and giggles, teasings and discussions, interesting conversations and senseless chats are all a part of the dinner table time when our favourite pizza is served with lots of love 

My kids love to help me out when I am making pizza. They get to spread the sauce, top the veggies, grate cheese and spread it, sprinkle seasoning and yes lick some sauce off the spoon  and finally eat some cheese when grating ;) Its fun time for them and so I let them enjoy. They are pretty cool kids..... they help me with all this and then when we put the pizza for baking ...  they rush to clean themselves up and set up plates and water bottle and getting everything ready for some interesting fun time

I love making the base at home as it tastes way better than the store-bought ones. Initially I used only maida/APF for making the pizza base but now I use a 50-50 ratio of APF and whole wheat flour and it tastes good. There were a couple of times when I gave a try on 100% whole wheat pizza but to be honest I hate that dough as when I take a bite I feel I am eating only dough and not pizza. 50-50 works good




Serves... 2 medium size pizzas
Serve option... Hot

This is what u'll need...

For Base
Whole Wheat Flour - 1 1/2 cup
All-purpose Flour - 1 1/2 cup
Active Dry yeast - 2 tspn
Sugar - 1 tbspn
Salt - 1 tspn
Oil - 3 tspn

For Topping 
Onion
Tomato
Capsicum
Paneer
Oregano Seasoning
Cheese
Cheese Spread
Tomato-chilli sauce

Here is the stir.... 
  • Measure 1 1/2 cup of whole wheat flour into a wide bowl



  • To the same bowl add 1 1/2 cups of all-purpose flour or maida
  • Add 1 teaspoon of salt 
  • To activate yeast add 1/4 cup of lukewarm water to a cup. Add 2 teaspoon yeast to the water. Sprinkle a tablespoon of sugar into the cup. Give it a good mix and it stand for about 10 minutes till the mixture turns frothy. For detailed instructions follow the step-by-step instructions here -> How to Proof Yeast
  • Pour the frothy yeast mixture into the bowl with flour mix. Add 1/4 cup of water 
  • Mix everything with your fingers and pull the mixture together till it looks like a sticky mass. Add more water if needed
  • Keep kneading for a couple of minutes till the dough starts to pull out from the sides of the bowl and is a little less sticky than before
  • Transfer the dough to your kitchen counter or any clean work surface
  • Add 2 teaspoons of oil to the oil and start mixing it into the dough gently
  • Knead it for about 5-7 minutes until the dough is soft and elastic. Shape the dough into a smooth ball
  • Grease the bowl used initially with a teaspoon of oil. Place the dough inside the bowl and oil it too
  • Leave this covered in the bowl and let it rest in a warm place for about 45 minutes to an hour or until the dough doubles up
  • Once the dough has risen well, divide the dough into two parts. Each part will make one medium sized pizza
  • If you are planning to make one then you can refrigerate the other one in an airtight container. Before using it again, leave it in out on the kitchen counter to let it come back to room temperature
  • Grease you baking tray or dust it with some corn meal. Roll the the dough using you fingers to get the desired shape

  • Spread a tablespoon or little more of tomato-chilli sauce (our instant pizza sauce) evenly on the base
  • For toppings we have used home-made paneer, sliced onion, capsicum and deseeded, sliced tomatoes
  • Spread your favourite veggies on the top of the base
  • Grate cheese on top. We added a little of cheese spread too. You can skip if you dont like it
  • Sprinkle oregano seasoning generously 

  • Place this in a 180 degrees preheated oven and bake it for 18-20 minutes. I use godrej microwave for baking so I prefer using the auto option for baking pizza. It turns out perfect every time
  • Once done slice the pizza into wedges
  • Serve hot and enjoy with your family



                                                                Note:
                                                                • A 50-50 ratio of  flour mix turns out good for us. If you still feel it too heavy use 1:2 ratio of whole wheat and maida
                                                                • Knead it very important to get the perfect crust
                                                                • Use only lukewarm water when working with yeast
