Paneer Jalfrezi

Paneer jalfrezi is a quick and yummy appetizer that is loved by one and all. It is so easy to make that you wont say no when your family wants you to make it for them. This recipe has a perfect combination of a little spicy and tangy flavor that tastes perfect for an apt and quick starter. I should say it is mildly spiced and is a kind of stir fry. Your choice of vegetables are given a quick stir on very high flame to maintain the crunch and freshness.

This can be a perfect addition for a menu when making a meal for unexpected sudden guests. Its only the time taken to chop the veggies and the rest is only five minutes of your time to pull it all together

Serves... 4 ppl
Serve option... Hot

This is what u'll need...

Cumin seeds - 1/2 tspn
Red chillies - 2
Green chillies - 2
Ginger - 1 inch piece
Onion - 1 big
Capsicum - 1 medium
Tomato - 1 medium
Paneer - 100 gm
Turmeric powder - 1/4 tspn
Red chilli powder - 1/2 tspn
Coriander powder - 1/4 tspn
Vinegar - 1 tspn
Oil - 1 tbspn
Salt to taste

Here is the stir....

  • Heat a tablespoon of oil in a wide flat pan
  • Add cumin seeds and dry red chillies to the pan. Let the cumin seeds start crackling in hot oil
  • Slit a couple of green chillies and toss them in. Cut ginger very thinly into long pieces and add it to the pan, I should say julienned
  • Turn the flame to high. Add thinly sliced onions to hot pan
  • After a few seconds add julienned capsicum i.e. thinly sliced capsicum. Fry this for about 10 secs
  • Cut paneer into thin long strips and toss it into the pan
  • Now add thinly sliced tomatoes. Dont add the pulp or seeds section of tomatoes, that will make the stir-fry very soggy
  • Time to add a few spices. Add turmeric powder, red chilli powder, cumin powder

  • Add a teaspoon of vinegar
  • Lastly add salt and give everything a quick and gentle toss
  • Transfer this to a serving plate
  • Serve hot and enjoy your appetizer

                                        Note:
                                        • Keep stirring the contents frequently as you would be cooking on high flame
                                        • Cook everything only for a few seconds after adding to the pan. This will help retain the crunch
                                        • Dont overcook as we are intending a stir-fry here
