1 Minute Cherry Almond Mug Cake..


When I was browsing the internet with nothing else to do I chanced upon a recipe for cherry almond cake. I wanted to try it but was sure that my kids will not even bother to try it as they hate almonds and cherry too. Now I was in a fix thinking if I should make a big batch and share with friends or just leave the idea of making it at all as none in the family is gonna entertain it. Also I did not know how would the taste be so was very skeptical in trying 

Finally ended up deciding to make the almond cherry cake but not as a regular sized cake. I made it in a mug and enjoyed it. It was soft and feathery and the aroma was awesome. Made it again the very next week

  


Serves... 1 person
Serve option... Warm

This is what u'll need...

All-purpose Flour/Maida - 3 tbspn
Almond powder - 2 tbspn
Sugar - 2 tbspn
Baking powder - 1/4 tspn
Oil - 2 tbspn
Milk - 2 tbspn
Almond or vanilla essence - few drops
Almonds - 2
Cherry - 4

Here is the stir....
    • Add 3 tablespoons of all-purpose flour/maida to a tall mug
    • Peel some almonds and then pulse them in a blender jar till it is fine. Add this almond meal to the flour
    • Spoon in 2 tablespoons of sugar into the mug followed by 1/4 tspn of baking powder

    • Pour 2 tablespoon of oil and 2 tablespoon of milk 

    • Follow this with some drops of vanilla/almond essence

    • Mix everything together using a fork and add some finely chopped almond pieces

    • Slice some cherries into circles and add it to the batter and give it a good mix
    • Top it with some more chopped almonds and cherries
    • Microwave this for a minute. After a minute check the cake for doneness and add 10 second intervals to check the cooking. Mine took about 1 minute and 35 seconds
    • Let it warm down and sit back and enjoy your very own mug cake

                                    Note: 
                                    • Adjust sugar to suit you taste
                                    • You can use baking soda+vinegar instead of baking powder
                                    • Remove the skin from almonds before grinding it
