Verkadalai Sundal... Peanut/Groundnut Sundal

Verkadali Sundal is a healthy option for a healthy snack or even for a simple breakfast. I have always loved this especially when it is given as prasadam. That little bit that is served just tickles the taste buds so well... Simple to make and tasty to enjoy

  

Serves... 2 ppl
Serve option... Warm

This is what u'll need...

Dry peanuts - 1 cup
Grated coconut - 1 tbspn
Mustard seeds - 1/4 tspn
Brokel Urad dal - 1 /4 tspn
Red chillies - 1 or 2
Curry leaves - few
Oil - 1 tspn
Salt to taste

Here is the stir....
    • Measure peanuts into a bowl. Pour enough water to soak it. Soak it overnight for best results
    • Next morning put the peanuts in a pressure cooker
    • Pour required amount of water and add a little salt
    • Pressure cook for 4-5 whistles. Turn off the flame and let it cool
    • In a small pan add a teaspoon of oil. Add mustard seeds, broken urad dal, red chillies and curry leaves
    • Pour this tadka into the peanuts. Add grated coconut on the top
    • Give the mixture a good stir till everything is mixed well
    • Transfer it to a serving bowl. Serve warm and enjoy

                                      Note: 
                                      • Keep the peanuts soaked for atleast 8-10 hours(overnight) for best results
                                      • Dont add more oil or you will feel it too greasy
