Eggplant/Brinjal Gold coins

Eggplant as a vegetable side dish is not a favorite for my kids but when it comes to this one - there is no second thought running in their little minds other than just gobbling it down. This is 'an always welcome' veggie for my kids.





Serves... 4 ppl 
Serve option... Hot sambar rice / lemon rice

This is what u'll need....

Eggplant(Green/Purple) - 4 medium
Rice Flour - 2 tbspn
Red Chilli powder - 1 tspn
Turmeric powder - 1/2 tspn
Jeera powder - 1 tspn
Oil - for frying
Salt to taste

Here is the stir....
  • Cut eggplant into small circles about a quarter inch thickness each
  • Mix all the dry powders to the eggplant rounds - rice flour, chilli powder, jeera powder, turmeric and salt. Swirl them all around so that all the pieces get coated evenly with the mix
  • Heat a pan and drizzle a little oil around. Arrange all the slices in a single layer  not overlapping each other. Cook on low flame till golden brown

  • Flip all the rounds to cook on the other side too. Wait till the second side is golden brown too

  • Transfer them to a serving bowl and enjoy them hot and crispy with rice or rotis



Note:
  • Dont fry it too dark as they turn bitter

  1. Seems easy to prepare. Love this. But I'm looking for organic eggplants. Wonder where do I buy some as well as the turmeric/curcumin powder?

  2. Thanks for stopping by and your valuable comment. Turmeric and cumin powder can be bought over any India grocery store. Depends on where you live :)
