Creamy Macaroni soup

Soups are very comforting during lazy, cozy evenings. A rainy day or a cold evening is best enjoyed with a warm bowl of soup. Macaroni soup is a rich, creamy and heart-winning soup that will please kids and elders alike. My kids are a big fan of this soup. The best part is you never have to ask them to finish the soup... coz its already gone before you have to even ask them to drink some. 

This soup has little bit of veggies and loads of macaroni seasoned with mild seasonings and enriched with cream. Its not one of those spicy hot soups but instead gently seasoned
A bowl of soup is pretty filling and sometimes we end up having just this soup for dinner with a small serving of fruits. Light to the tummy it sounds perfect to me. A bir treat for kids



Serves... 3 ppl
Serve option... Hot

This is what u'll need...

Macaroni - 1 cup
Onion - 1 small
Carrot - 1 small
Coriander stalks - 15-20 twigs
Garlic cloves - 5-6
Milk - 1/2 cup
Vegetable stock - 2 cup
Cream - 2-3 tbspn
Butter - 1 tspn
Oil - 1 tspn
Pepper to taste
Salt to taste

Here is the stir....
  • Heat a pan and add a teaspoon of oil followed by a teaspoon of butter
  • Finely chop the garlic and toss them into the pan. Saute this for a few seconds till you can smell the aroma of garlic. Make sure not to brown/burn the garlic else they tend to taste bitter
  • Chop a small onion finely and toss it into the pan. Cook this for about a minute or two
  • Chop carrots finely or a little big as per you wish. We like to enjoy a little bite so end up adding small cubes
  • Finely chop the coriander stalks and stash them into the pan. Soup recipes call for celery but since I never get to but it in my neighbourhood I end up adding coriander stalks. I saw this tip on a tv food channel and have been using coriander stalks since then. Saute this for about 5-6 minutes till the carrots are cooked half-way through
  • Add salt to taste
  • Pour 2 cups of vegetable stock into the pan and bring it to a boil

  • Add 1 cup of macaroni to the stock and cook it till done

  • Pour half a cup of milk to the cooked macaroni and give it a good stir
  • Top it up with 2-3 tablespoons of cream. You can even use 1/4 cup of cream for a ricer flavour
  • Bring this to a slight boil
  • Season it with pepper and transfer it to a bowl
  • Serve hot and enjoy your evening



                                            Note: 
                                            • Saute garlic on low flame to bring out the flavours. Take care not to brown/burn them
                                            • Adding vegetable stock give a nice flavour to the soup
                                            • Dont cook too long after adding the milk and cream
