Kulfi using Badam milk mix... turned out delish

Summer is getting into its peak and we all longing for more of cold and chilled stuff rather than hot or warm. Helping the kids enjoy a chilled treat ... I got them a little goodness of almonds which they are not a big fan of




Badam Drink is a very flavorful drink which turns out to be rich and creamy. A shahi drink, I should say. I have loved this drink from as long as I can remember. From the time when I have had a kitchen all to myself I have started shelving it to enjoy whenever I like. I make the powder/mix in advance and fill up a little jar once in a while. It stays fresh in the freezer for a longer time. I wanted my kids to enjoy badam drink but their taste-buds did not appreciate  the drink as much as mine did. I serve them once a week to help them get the goodness of almonds. Yes they did drink it but many a times it's just poured into the tummy with a big pout on the face giving me that weird expression which always meant "Maaa.....Why do you always want me to drink something healthy?" 

I have followed the "Try and try and you will succeed method" with this but it has continuously failed. So this time I tried again with a little twist to make them smile and enjoy a treat. I was a little skeptical when I started making it. I let those little hands help in making their favorite kulfi ... the way we named it so it was more attractive to the eyes and ears




With summer heat pushing everyone to the extremes ... this was the perfect chance for us to enjoy this treat and guess what ... IT WORKED!!!!! They loved it and have been wanting more of it so the drink mix jar is getting empty faster than before :) Recipe for badam drink mix will be posted soon


Serves... 4 ppl
Serve option... Frozen

This is what u'll need....

Milk - 500 ml
Cream /Fresh Malai- 1/2 cup
Badam Drink Mix - 4 heaped tbspn
Sugar to taste
Almonds for garnish

Here is the stir....
  • Heat milk in a pan and bring it to a boil. Let this simmer for 5-7 mins so that the milk thickens a little. Turn off the flame and let it sit for 5-10 mins and get back to warm/lesser temperature
  • Add fresh cream to this. This will help the milk to thicken up and give it a rich and creamy texture
  • Spoon in four heaped tablespoons of badam mix into the milk. Also add desired amount of sugar to it. Whisk it to avoid any large lumps. You can use readymade badam milk mix or you can make at home too. Will post the recipe for homemade badam drink mix soon
  • If using store bought mix, check if any sugar is needed. I guess many of them have sugar in the mix already. I am not sure about this so check before you add sugar. You dont want something too sweet right???
  • Pour into moulds and stick in a popsicle stick. We used small glasses and sturdy fruit-picks instead. I did not want to drive to the store to pick a kulfi mold  :) 

  • Garnish it with coarsely ground almonds for a nutty effect as in store bought kulfis. My kids dont like the bite of nuts in their kulfi so I dont add them in theirs
  • Pop it into the freezer and wait till its completely frozen. Should take around 6-8 hours
  • Remove from freezer just before serving and enjoy the chilled treat. Hold it under running for a few seconds to demould it faster and with ease
  • Enjoy your kulfi and beat the summer heat



Note:
  • I use fresh cream/malai  made at home. It gives a fresh and creamy texture to the kulfis
  • Let the milk cool down before you add the malai
  • Increase the amount of badam mix if you want a richer flavor
