Maida / all-purpose flour- 1 cup
Cumin / Omam(Ajwain) - 1 tbspn
Oil - 1 tbspn for dough
Oil - for frying
Salt to taste

Here is the stir....
- Measure in all-purpose flour / maida into a wide bowl
- Add salt to taste
- Add ajwain seeds to the flour.You can also use jeera or cumin seeds. I personally prefer using ajwain though
- Spoon in one tablespoon of oil into the flour
- Use your fingers and rub the oil into the flour mixture. Once the oil has been rubbed in, it will look like bread crumbs
- Add water little by little to the flour mixture
- Knead it into a tight dough. Cover the dough and let it rest for about 15-20 minutes
- After 15 minutes transfer the dough to your work surface and knead the dough for about 2-3 minutes
- Pinch out a little dough and roll it into a ball
- Flatten it and roll it out into a thick chapathi
- Cut the chapathi into thin rectangles or diamonds or squares as per your wish
- Heat oil in a kadhai. Drop the cut pieces of dough into the oil and deep fry them. Fry them on medium flame to get crisp biscuits
- Stir frequently to get an even golden brown colour on the biscuits
- Once done, remove the biscuits from oil and drain them on a paper towel to remove excess oil
- When the biscuits come to room temperature, pack them in airtight containers to retain their crispness
- Pick a handful and enjoy anytime you like
Notes:
- Adding oil to the flour makes the biscuits crisp
- Make sure you rub the oil really well into the flour till it looks like bread crumbs
- Knead it into a tight dough
- Fry the biscuits on medium flame
