Butter Cookies .... soft and melt-in-the-mouth texture

Made these for my parents almost an year ago but never got a chance to post the recipe. It came out perfect and we enjoyed it so much. These butter cookies are very soft and have a melt in the mouth texture. Just need a handful of ingredients to pull this recipe together. If you have some flour, sugar and butter then you are good to go

The only trick is to cream the sugar and butter very well before adding the flour. And once you add the flour just stir around for a few seconds to pull the entire flour into the butter mixture and no more. No kneading as it will harden the cookies or make them chewy. You can add nuts or any favourites to make the cookies more interesting

Serves... 4-6 ppl
Serve option... Hot

This is what u'll need...

Butter - 1/4 cup
Powdered sugar - 1/4 cup
Baking power - 1/4 tspn
All-purpose flour/Maida - 1 cup
Milk - 2 tbspn (optional)

Here is the stir....
  • Preheat the oven at 180 degrees
  • Take room temperature soft butter into a wide bowl
  • Add 1/4 cup powdered sugar to the bowl. You can more if you like your cookies more sweet
  • Mix the butter and sugar together using a fork until the mixture is very light and fluffy. It should look airy
  • Measure in a cup of flour into the bowl
  • Add a 1/4 teaspoon of baking powder into the flour
  • Using a fork start pulling eveything together. Initially it will look just messy
  • Keep working with your fork or spatula and just bring the dough together. If the mixture looks too dry then add a tablespoon or two of milk into it

  • Place this in the refrigerator for about 30 minutes and then once chilled take it out onto a clean worksurface
  • Roll it out into a thick sheet. It wont be easy but just press it hard using a rolling pin
  • Use cookie cutters to cut desired shapes
  • Arrange the cookies on a baking tray
  • Place the tray in a 180 degrees preheated oven and bake for about 12-15 minutes or until the edges turn slightly brown
  • Cool them on a wire rack and store it in an airtight container
  • Pick them any time and munch away

                                              Note:
                                              • Use room temperature soft butter to get best results
                                              • Beat sugar and butter until it gets very soft and fluffy
                                              • Adjust sugar to suit your taste
                                              • Dont overmix the dough. Just mix it until there is no visible dry flour in the bowl
