Do your kids eat pepper or capsicum and that too all the colours. I guess no... mine atleast dont :) The only way to make them eat all these peppers is to make this sandwich. Its creamy and cheesy with the bite of capsicum inside which makes it even more tasty. My kids hate peppers but then when it comes to this sandwich there is no saying no. My four year old also likes this

This is what u'll need....
Chopped Green Pepper - 3 tbspn
Chopped Yellow Pepper - 3 tbspn
Chopped Red Pepper - 3 tbspn
Paneer Crumbled - 1/4 cup
Red chilli Flakes - 1 tspn
Butter - 1 tbspn
Milk - 1 cup
Maida / All purpose Flour - 1 tbspn
Cheese - 2 tbspn (optional)
Salt to taste

Here is the stir....
- Spoon in butter into a non stick pan
- Measure in a tablespoon of all purpose flour or maida into it
- Saute it on low flame for about half a minute or till the mixture is bubbling but not brown
- Add 1 cup of milk to the pan and whisk it till the mixture turns thick without any lumps
- Add in finely chopped peppers. You can increase or decrease the quantity as per your need. Update : Nowadays I toss the bell peppers separately in a teaspoon of oil for about a minute or 2 and toss it into the sauce. It helps them to retain their crunchiness more
- Crumble paneer and add it to the pan
- Add a teaspoon of chilli flakes to the mixture
- Grate in a couple of tablespoons of cheese into the bowl. It is completely optional. Initially I used to add but then stopped because the mixture is already cheesy due to the thick white sauce that we make
- Mix everything together to blend well
- Spoon a generous amount of mixture on one slice of bread. Top it with another slice
- Toast it in your sandwich maker till done
- Serve hot sandwiches and enjoy
Note:
- Dont brown the flour when you add it to the butter. It makes the sauce taste bitter
- Whisk it continuously to avoid any lumps
- Adding cheese is optional
