Kundru peanut sabji

Kundru is almost always in market and very often in our menu too. This is one recipe which is quite often made to go along with plain rice and dal combi.



Serves... 2 ppl 
Serve option... Hot rice

This is what u'll need....

Sliced kundru 2 cups
Tomato puree 1 tspn
Peanuts 2-3 tbspns
Jeera 1 tspn
Red chilli powder 1/2 tspn
Garam masala powder a pinch
Lemon juice 1/2 tspn
Salt to taste
Oil 1 tbspn

Here is the stir....
  • Heat oil in a pan and add jeera to it
  • Toss in sliced kundrus, salt and fry till they are 3/4 done
  • Add red chilli powder, tomato puree and fry for couple more minutes
  • Put the peanuts in and cook everything till done
  • Sprinkle garam masala and add lemon juice just before turning off the heat
