Mushroom-corn quesadilla ....

My kids fell in love with quesadillas the first time they had it. They love it with chicken stuffing and have never said no whenever offered. Taking advantage of their liking I started making different kinds of quesadillas... a lot of veggies stuffed versions. They love them a lot and enjoy them at home and also when packed for school

Quesadillas don't have to have just the perfect mexican style stuffing. Come up with your own and surprise your family. It's easy to make and pleases everyone so I love these once in a while for a simple change from our regular menu

Prepare your favorite filling with your choicest veggies/chicken and layer them on tortillas.  Top it with some salsa and cheese and heat them up on the griddle till the cheese is melted and the outside had a slight crunch to it. That's it ... you can serve a lovely meal in just no time

Blueberry muffins.... soft and moist on the inside and crumbly on the top


Muffins are always loved by everyone and I love it as it serves as a pick-n-go snack. At our home, we all have different likings to the kind of muffin that we love to have. I am a big fan of home-made muffins and so I would say I love all of them - all the flavours... my hubby loves the non-chocolatey ones, my elder one loves and prefers the chocolatey ones and my younger loves only plain vanilla or white-chocolate ones. When we have these many differences in taste preference there is no choice other than making all the flavours once in a while. These days I have loved making muffins with fresh berries. This is one among that. It turned out great and I am sure this recipe is keepsies

The lovely part is that it is very very simple to pull the recipe together. They are soft and moist on the inside and crumbly on the top. Loved it so much. It smelled so good when baking these mini cuties. They were so tempting that we could not wait for long before we started digging in. I tried it warm and they tasted perfect. Just the way I wanted it. Everyone loved it except for my little who did not want any berries inside a muffin ;) .... no worries I will be making him another batch tomorrow with no added stuff in the muffin :)

I am not sure where I got the recipe... of course on the internet though. I just had a screenshot of the recipe page on my phone without the website details... sorry about that. But whosever recipe it is... it is definitely a perfect hit

Uppu urundai.... a simple healthy breakfast

I love this breakfast option coz of its simplicity in taste and appearance too. My hubby is not a big fan of it though so I seldom make it. My mom makes it for me whenever I feel like having it as its a regular option for breakfast at theirs. I would say this would fall under healthy category as it uses very little oil and is steamed.... so everyone can enjoy guilt free

Rice batter is seasoned with a wonderful tadka and then steamed to perfection. It would serve good for breakfast as well as an evening snack. It is very filling too. Steaming hot they are perfect to taste




  

Crispy corn.... a yummy appetizer

Crispy corn appetizer is a new starter to me. We ordered it some time back when we went out for dinner with some friends. I usually order the regular stuff for starters whenever I visit vegetarian restaurants. But this time my friend was very clear that she wants to try something different so picked up 2-3 starters all that we had never tried. Well I should say... it was worth a try especially this crispy corn starter. We all loved it. Even the kids could not resist eating and they really really enjoyed it

After that I almost forgot about it until a couple of months back when my elder kiddo asked me to make some for him. I was somehow tied up with something or the other and kept forgetting about it. Last week when I bought some sweet corn to make some sandwich for breakfast Niks insisted me to make some crispy corn that day itself as I keep forgetting about it. He was not adamant in asking me to make it insead he told me how much he loved it the other day. He knew the recipe was easy so he kept pushing me and also offered help from his end to make this snack

I had some idea about the recipe because you can easily guess it once you try it. Checked out some recipes to get a good idea before I started to make it. The recipe calls fro deep-frying corn and then tossing them into some minimal spices... thats it. It doesnt take much time except if you are gonna photograph all the steps :)

Dry fruit chikki...using jaggery


Dry fruit chikki is a healthy snack which is a good addition to kids evening or any-time snack. Made with jaggery and dry fruits it is as healthy as it sounds. I make small batches to enjoy them fresh whenever we want. It is easy to make this chikki if you get the right trick to make the syrup. Its all in the syrup... if too thin then chikki becomes sticky and chewy and if its too thick then the chikki turns out very hard

I am not a big fan of store-bought dry fruit chikki. I feel that something is lacking in taste always. The sweeter component always dominates the dry fruit flavour making it more of something else than a chikki ;) The first time I made this at tie I knew what was the taste I was looking for. Adjusted the jaggery level and made according to our taste preferences. Making it is pretty easy and hassle-free so why wait when we can make the best at home. My kids love peanut chikki so when they gave this a try they loved it too. They pick them whenever they want and munch on

You can make a big batch and store it in an airtight container. Make some today and enjoy with your loved ones. I am sure everyone will love it

Crispy baby corn fry

Baby corn is so yummy and such a favourite to all. Loads of ways in which one can enjoy these cuties. We love it deep fried, in gravies, as starters, as pizza toppings and a lot more ways. This version of baby fry turns out very crispy and the best part is it is very very easy to pull the recipe together. The fried baby corn versions I have shared in my blog are the battered ones - Baby corn golden fry and Babycorn-65. They are great to taste and this recipe here makes yummy baby corn fry too but using just dry ingredients

I wont say its a kids favourite.... well it is everybody's favourite. Crispy, spicy coating on baby corn gives it a great taste. Bite sized pieces make it  more interesting and easy to eat. It is so addictive that no one can have just a few. It is gone as soon as it is served and there is always a demand for more

The taste is all about the spices you use to jazz up the babycorn pieces. I have used about 4-5 spices but you can top up the spice-list with your favourites. Spice mix,  flour and babycorn are the only stuff needed to make this.... and ofcourse oil. I cook the baby corn ahead of time and let it cool down. Once I need to make the fry I just add all ingredients to a bowl and toss the baby corn pieces too so that its well coated. Deep fry them and thats it they are ready to eat

Vanilla cake in pressure cooker




My mom first started making cakes in a pressure cooker. She used to make it often and we would be excited and jumping around to get the first bite of the freshly baked warm cake. During childhood, most of the days used to feel like an occasion as some neighbour or other friend will always be there in the afternoons chit-chatting and making or doing something. We used to have a good time and the days used to be so lively. Neighbours used to come home often, sit and chat for long times, friends used to stop by to play and we used to have all sorts of fun. This cakes brings back a lot of memories :)

I started making cake in oven so did not try to make in pressure cooker any time. I have a few friends who have been asking for the procedure to make cake in cooker. Every time my friends ask me I would call my mom, get the recipe and then again call my friends back to explain everything. I have done this so many times now that I understand it is high time I jot it down and make a post so that the recipe stays in the tip of my hands always

The use of cooker makes the cake taste a little different around the edges if you let it brown a little. I love the browned edges and really love biting into it. They taste really wonderful. I tried making it at home and enjoyed every bit of whatever I got :) The kids loved this version too

Simplest chicken nuggets

Chicken nuggets are every kids favourite. I make it my mincing meat and then adding egg and spices to it. Finally they are shaped and fried till done. I also make it using the breading method which tastes very different from the minced style. They both taste very different and also very good

This recipe calls for very simple ingredients for marination and then a simple breading technique. You can as little or as many spices when marinating the chicken. Here I have kept it very very simple and it turned out just great. A simple trick to make your kids happy

Chocolate in a rose


What do you do when there is some leftover pizza dough.... We usually end up making some soup-breadsticks or thin crisps or small buns. Once we tried this beautiful roses. Saw this pin on pinterest about various ways to fancy the regular dough to make it look more interesting. There were so many options to look for but only a few stayed in my mind. This is one among them

When we had very little dough left, we just split it into four and made a very small treat for all of us.... just one small bite-size for each of us. Instead of folding it with extra dough in the middle we decided to use some chocolate and cherries that we had in hand. It turned out to be a fun snack for the kids. They loved the way it looked and tasted too

I have used little of pizza dough made using 50% whole wheat flour and 50% all-purpose flour. You can use the same ratio or 100% whole wheat flour or 100% all-purpose flour. The dough will have a little bit of salt but that contrasts really well with the chocolate inside. We loved it that way

Sundried Potato chips.... brings back nostalgic memories

Potato chips are an all-time favourite everywhere. These potato chips are very different from the regular chips that we make. The usual potato chips are made by just slicing the potatoes and frying them in hot oil. These sun-dried potato chips are way different in the making and also in taste. The best part is that you can make a big batch of dry chips and store them. Whenever you feel like eating them just heat some oil and fry a handful chips. Sprinkle some red chilli powder and enjoy

These sun-dried chips bring in a lot of memories of childhood when my mom using to make very big batches of these and would store them in big dabbas. We kids used to help in drying them. Mummy used to blanch the slices and pass on the container and we used to used to lay them on big plastic sheets. It used to be fun sitting under the sun, not realising the heat and instead enjoying, chatting and arranging the slices. In fact it was like a little game for us. We used to try to do it as fast as we could to see who could do more. Once all would be done we would wait till evening to do the next job. Peeling the potato chips which would have stuck to the sheets. It used to be fun .... we used to enjoy that part too. The next day the chips would be dried again under the sun and then once they would very dry we would stash them in big containers. It is a fond memory that makes me smile even now

Couple of weeks back when my mom was telling some childhood stories of mine to my elder kiddo she mentioned about these chips that she would make for us and how we used to fight over it . I was also there listening to their lively conversation and this part interested me. It brought back so many memories that we got engrossed in it for quite a while. The kids were too excited and they enjoyed their grandparents time a lot that day. Even after starting from my moms place that day I continuously got reminded of these sun-dried potato chips which I used to love so much during my childhood days. On the way back home I made sure to stop at the sabjiwala and pick a decent batch of fresh potatoes which were perfect to make the chips. As soon as I reached home called up mom and checked with her on how to make it. She told me everything but in the end added that this was not the right time to make it and I should wait for a month or little more to let the outside temperature soar a little higher. I did not want to wait so long so convinced her saying I would try a small batch and if everything works fine I would continue making a bigger batch. It turned out perfect and the kids fell in love with it. I made another batch last week and they are yummmm

Simple vanilla choco chip muffins


This is a recipe that I tried from the back of a box of choco chips. We bought choco chips to make some cookies but when my kids started helping me in the kitchen they found a recipe on the back side of the choco-chips box that said muffins. Immediately they changed their plan from cookies to muffins. It was difficult to convince them from not making so I thought why not give it a try. Good that we tried because it turned out perfect and exactly the way my kids like

The recipe was actually for chocolaty choco-chip muffins but we made vanilla choco-chip muffins and the reason was very simple......... we ran out of cocoa powder :)  The kids loved it so much that they packed some for their friends at school too. Its nice to see that they want to share and enjoy

We made these muffins long back but could not post the recipe. Time to make it again I think :)

Italian pizza... our new favourite


I have always had this regular crust pizza which is nice and thick and spongy and crispy to bite into. For long I have been making only this kind of crust until a few months back when we had an Italian-style pizza topped with indian-style spicy tandoori chicken and a lot more toppings. We had this at a pizzeria when went out for a small outing. After a day out under the hot sun we were all tired and on the way back home we decided to stop by a restaurant to finish off dinner too. Lucky that day we ended up at this pizzeria where the kids could have a little fun. There was an option for kids to get into the pizzerias kitchen and make their own pizza. The kids were so excited when they were asked to wear a cute pizza-slice-like-apron and pizza-like-cap before they could go into the kitchen

The chef was very friendly and helped the kids get comfortable with the surroundings. He helped the kids in doing every bit involved in pizza-making. Right from rolling the dough to spreading the sauce, placing the topping, sprinkling the cheese and finally placing the oven for baking. Every part of it was fun. The kids were smiling and giggling and talking and laughing and making and enjoying a lot. It was a different experience for them and they loved it sooo much. After they were done making the pizza they cleaned themselves up and they were asked to take their seats to enjoy their dinner. It was just a 5 minute wait time but they could not stand the excitement. They were very busy explaining things to me and my hubby (though we were around all the time). By the time the kids could finish explaining, dinner was served. It looked as any normal pizza but yes the bite had a great difference. The thin crust was sure a little different. It was a little crisp rather than the regular hand-tossed crusts and we liked it more. We became immediate fans of this thin-crust pizza that I dont remember how many time we have made this at home

My younger one always had a dislike for the corner crust from regular pizza and would never finish it off but toss it in the garbage bin. He would say there's too much of bread in it ;) Now he loves this one and  is always after me asking me to make this. If not often we sure enjoy it once in a while. The best part is you dont feel too heavy after finishing off your pizza

You can use regular pizza dough using yeast or just work uo a small batch using some baking powder and still enjoy the same. We love this in our home and I would suggest you try this too if you are a pizza fan. You will definitely fall for it :)

Cheesy masala paneer buns


Cheesy masala paneer buns are spicy, cheesy and yummy. I made these for school breakfast-time snack and the kids loved it. If you can make the dough the previous night and let it rise in the fridge then you can pull this recipe together in the morning in no time. Kids will love to take a different snack to school and in fact they will ask you for more to share with their friends too

We love making stuffed buns at home. I try to use different kinds of stuffing to keep the kids loving it more and more. These buns were made a long time back but could not post it. I started my bread and bun baking with all-purpose flour only but now i use 50% whole wheat and 50% all-purpose flour. I think there is a very decent balance of taste which takes care of the nutty flavour of wheat flour

Freshly made homemade paneer tossed in a rich gravy filled with spices and cooked till semi-dry makes the perfect stuffing. Kids will love this
