Adding another simple version of an everyday palak gravy recipe to serve an addition to the healthy menu. This recipe has a aromatic hint of coriander that invites you to eat.
This is what u'll need....
Palak/spinach 1/2 bunch
Coriander 1/4 bunch
Curry leaves 1/2 a handful
Green chilli 2

Garlic cloves 3 big
Onion 1 small
Tomato 1 small
Mustard seeds 1 tspn
Jeera 1 tspn
Salt to taste
Oil 1 .5 tbspn

Here is the stir....
- Heat oil in a pan and add palak, coriander, curry leaves and green chillies. Fry a little till everything is tender and looks cooked. Let it cool, transfer it to a blender, grind it to a fine paste and keep it aside
- To the same pan add a little oil and follow it with mustard seeds, jeera
- Toss in chopped garlic, chopped onions, salt and fry till it turns translucent
- Add chopped tomatoes and fry till everything is cooked
- Pour the spinach mixture and cook everything for another 2 minutes
- Serve warm with hot rice
