Russian salad is a popular entree in the Russian cuisine made with diecd fruits of choice and small diced vegetables that are parboiled. The fruits and veggies are then tossed in a mayonaisse dressing. This salad has a texture and flavour that is completely different from the regular salads that our taste buds are used to. I should say its a little sweet rather than the regular tangy or plain ones. Its a very quick and easy recipe to make in just a few minutes
I got introduced to this new favourite of mine when we went out for lunch with a dear friend of ours. We loved the food at this restaurant. Just ate starters and sides and we were full :). Serve option... Chilled
This is what u'll need....
Potatoes - 1 small
Carrot - 1 small
Beans - 3
Green Peas - 3 tbspn
Apple - 1/2 or 1 small
Mayonaisse
Salt, pepper and mustard powder - if using store bought mayonaisse

Here is the stir....
- Boil water in saucepan
- Dice carrots into small cubes. Cut beans into small pieces
- Add carrot, potato and beans to the boiling water
- After a couple of minutes add the green peas
- Cook for a few minutes. Dont overcook the veggies. The salad tastes best with a little crunch
- Turn off the flame. Drain off the water and set the veggies aside to cool
- Meanwhile peel the apple and cut into small dices. You want to do this in the end else the apple pieces tend to brown
- Spoon in a tablespoon of mayonaisse into a wide bowl
- If you are using store-bought mayonaisse then add a little bit of salt, pepper powder and mustard powder. I used homemade mayonaisse so had already in it
- Toss in the apple and vegetables and give it a good mix
- Taste it and adjust as per your liking. Add another tablespoon or half tablespoon of mayonaisse and stir it in
- Chill it in the refrigerator till ready to serve
- Serve chilled and enjoy
Note:
- Keep a little crunch in the veggies to get the best flavours
- Add mayonaisse as per you liking. I liked it creamy
- Add salt, pepper and mustard powder to the salad if using store-bought mayonaisse
