Vanilla cupcakes are the best cupcakes ever. Growing up, those were the only ones readily available anytime in the bakery. Well there were not many bakeries around as well. But now things are different, there are bakeries or atleast baked goodies in almost every nook and corner and also we get so many options to try out even in the smallest bakery in town. But even though I have so many varieties to pick from, the one really close to my heart are these vanilla cupcakes . I can munch on them all day long
These are soft and moist and appeal to young and old alike. Kids even love taking them to school for a little snack. Its nice to share a few with their friends at school
There are so many recipes to try out and everyone has a different taste bud to appease. I follow few recipes. Some use more eggs, some more milk, some with baking powder + soda, some just baking powder. Every recipe is a little different but has a unique outcome. I love trying these recipes whenever I come across one. If our family likes it then it sure gets into the keepsake list forever.
This recipe is one which turned out really good and was a superhit among kids. The recipe is pretty simple so there is no way one can go wrong. I would suggest you to try it to believe it :)
Serve option... Room Temperature
This is what u'll need....
All purpose flour - 1 1/4 cups -2 tbspn
Corn flour - 2 tbspn
Sugar - 3/4 cup
Egg - 2
Baking powder - 1 tspn
Baking soda - 1/2 tspn
Vanilla Essence - 1 tspn
Melted Butter / Oil - 1/2 cup
Buttermilk - 1/2 cup
Salt -a pinch
Corn flour - 2 tbspn
Sugar - 3/4 cup
Egg - 2
Baking powder - 1 tspn
Baking soda - 1/2 tspn
Vanilla Essence - 1 tspn
Melted Butter / Oil - 1/2 cup
Buttermilk - 1/2 cup
Salt -a pinch
Here is the stir....
- Preheat the oven to 180 degrees
- Measure 1 1/4 cups of all purpose flour / maida. Remove 2 tablespoons from this and put it back in your container
- Add 2 tablespoons of corn flour to APF / maida
- Add a pinch of salt
- Measure 1 teaspoon of baking powder into the flour
- Add 1/2 teaspoon of baking soda to the flour mix
- Sieve everything together 2-3 times to make it light and airy. Set this aside
- In a wide bowl crack open 2 eggs
- Whisk it a little using a blender
- Add sugar to the eggs and beat it till light and fluffy
- Pour a teaspoon or little more of vanilla essence to the mixture and blend lightly
- Now add half a cup of oil to the wet ingredients and give a quick blend
- Time to add the dry ingredients. Add the dry ingredients slowly in batches into the wet mixture and blend well
- Measure half a cup of buttermilk into the mixture and fold well.
- Cupcake batter is ready now
- Pour/spoon batter into cupcake moulds to fill half way
- Place it in the preheated oven for about 15 minutes or till done
- Remove from oven and let it cool on a wire rack for a few minutes
- Remove the cupcakes from liners/moulds and serve
- Serve your kids with love and enjoy
Note:
- Dont blend the batter for too long at any stage. Just mix enough to incorporate
- Adjust sugar to suit your taste. For us this amount tastes perfect
- Let the cupcakes cool down before you remove the liner to avoid breaking them
