Babycorn has not been in our menu till recently as my kids never wanted to give it a try for some reason. It was in the beginning of this year that they tried it during our vacation to Goa. Thanks to my friends daughter who ordered this at a time when the kids were damn hungry after a tiresome day. They had to give it a try and that was it..... they just fell in love with it. From then on there has been no stopping
A fun vegetable for them that they love in all forms now... fry, gravy, stir-fry.... They cant stop having it now. I have always loved it but never made it earlier because I would be the only one eating ... but now its attack time... yes... we have to attack on it else we wont even get a single piece to taste

This is what u'll need....
Babycorn - 10-12
Maida / All Purpose Flour - 2 tbspn
Corn Flour - 1 tbspn
Rice Flour - 1 tbspn
Red Chilli powder - 1/2 tspn
Fennel powder - 1/2 tspn
Ginger garlic paste - 1/2 tspn
Oil for frying
Salt to taste

Here is the stir....
- Wash and cut the babycorn lengthwise into four pieces. This is optional. You can use whole baby corn as well. We like it this way as we get more to eat and we feel its loaded with flavours more
- Put them in a pressure cooker for cooking. I cook it in pressure cooker but you can do it in an open pan too
- Add salt and water to the cooker and pressure cook for upto 4-5 whistles. Turn off the flame and let it cool. Drain the excess water using a strainer and keep it aside
- In a wide add 2 tablespoons of all purpose flour
- Spoon in a tablespoon of cornflour
- Add a tablespoon of rice flour. Adding rice flour gives a nice crisp and crunch to the fry
- Mix in red chilli powder, fennel powder and salt. You can vary the spices as per your taste
- Add water and give it a mix
- Add ginger garlic paste and mix well with a fork or whisk to make sure there are no lumps. The batter should not be too thick nor too runny
- Heat oil in a pan
- Dip a slice of babycorn into the batter till drenched well
- Slide battered babycorn into the oil and fry on medium high flame
- Fry on both sides till golden brown
- Once done drain them on paper towels to absorb excess oil
- Serve hot with ketchup or as it is
Note:
- Dont overcook the babycorn else they will break
- The batter should not be too runny
- Cooking time is very less ... its only the time taken to cook the batter as the babycorn is already cooked
