We had a small bottle of mango juice leftover after a small get together. Made it into a delicious jelly using gelatin. Kids loved it a lot and me too :)
Its pretty easy to pull the recipe together except that you should have enough patience to let it chill in the refrigerator for a couple of hours. We dont have that level of patience so we keep checking every 10-15 minutes to see if got set :)

Serve option... Chilled
This is what u'll need....
Water - 1/2 cup
Gelatin - 1 tbspn
Mango Juice - 1 cup
Gelatin - 1 tbspn
Mango Juice - 1 cup
Here is the stir....
- Pour water into a saucepan
- Add gelatin to the water and give it a good stir
- Let this gelatin mixture rest for 10 minutes. This helps the gelatin to bloom
- Put this pan on the stove and turn on the flame to medium
- Keep stirring the mixture till the gelatin gets completely dissolved
- Turn off the flame and let it cool to room temperature
- Add the juice to the pan and stir it well
- Pour it into moulds or cups or shot glasses and let it set in the refrigerator for 2 hours
- Serve chilled and enjoy
Note:
- Dont bring the mixture to a boil. Just heat it till the gelatin melts
- Add sugar to the mixture in the end if you feel it is not sweet enough
- Make sure you let the gelatin bloom for some time before heating it
