I already have a recipe up in the blog for egg frankie. Its tastes awesome but then sometimes kids get fussy about raw onions and the drips that might end up on their clothing when they hold their rolls. My kids love egg rolls but that is the complaint they had so we came up with this version and it has been loved ever since. They love this for breakfast, as as after-school snack or for dinner. I am happy too to serve this as its nutritious and quite filling

Serve option... Hot
This is what u'll need....
Chapathis - 4
Eggs - 3
Onion - 1 large
Green chilly - 1
Tomato ketchup - 1-2 tbspn
Oil - 2 tspn
Salt to taste

Here is the stir....
- Chop the onion very finely and toss it into a wide bowl
- Slit the green chilly and chop it really fine. You dont want the kids to bite into a big piece and cry out loud. You can skip it altogether but I think it gives a very nice and fresh flavour. My kids are always in for it
- Crack open the eggs into the bowl
- Add salt to taste
- Mix the mixture well till everything is well incorporated
- Heat a tawa and pour half a teaspoon of oil in it
- Add 1/4th of the egg mixture to the tawa
- Place one chapathi on top of the egg mixture and press it gently till get the egg spread out well under the chapathi
- Let it cook on low flame till you feel its done
- Flip the chapathi over and let it be there for another 5 seconds
- Remove it to a plate and let cool to be able to handle
- If your kid prefers tomato ketchup them add a spoon to the chapathi. Spread it all over with the back of a spoon
- Roll the chapathi and set it aside. Do the same with remaining chapathis
- Cut each wrap into halves and serve hot
Note:
- Adding green chillies gives a fresh taste. You can omit it if your kids dont prefer
- Cook on medium flame to avoid over browning the egg
- Press the chapathi a little hard on the egg mixture to spread it all over under it
