Finding healthy and yummy options to eat is always in every moms mind. Cakes are an all-time favorite and an all-time hit in every house but lurking with maida or all-purpose flour is not a good idea always. A substitute with whole wheat flour gives our senses a guilt-free feeling when enjoying a tasty snack
We tried making whole wheat mini chocolate muffins for a simple snack and loved it. Pack a couple of them for kids school and hubby's office and they are all enjoyed with a sense of satisfaction. I havent egg in this recipe. Instead used a mashed ripe banana for a great taste and moist cake

This is what u'll need....
Oil - 1/4 cup
Powdered sugar - 1/2 cup
Ripe Banana - 1
Whole wheat flour - 3/4 cup
Fresh Cream - 2 tbspn
Cocoa powder - 1 tbspn
Baking powder - 1/2 tspn
Powdered sugar - 1/2 cup

Here is the stir....
- Preheat the oven at 180 degrees
- Pour oil into a wide bowl
- To this add powdered sugar. Adjust sweetness as per you taste
- Mash up a ripe banana. I ran it thru the mixer for a smooth paste. Add this to the sugar mix
- Mix all the wet ingredients. Beat it up a little to make it fluffy
- Next add whole wheat flour, baking powder and fresh cream. I used fresh cream saved at home from milk that we buy
- Spoon in cocoa powder to the above mixture. Adjust quantity to suit your taste. We ended just fine with this amount. You might add more or less
- Mix everything well under evenly incorporated
- Dust/grease the muffin tray and spoon in the mixture only till half-way thru each. They need enough room to rise :). We used a mini muffin tray
- Place the muffin tray in the oven and bake for around 20-22 mins or until done... or until a toothpick comes out clean
- Place it on a wire to cool down a bit before you start pulling them out
- Serve it with milk/coffee and enjoy the treat
Note:
- Adjust cocoa powder and sugar to suit to your taste
- Using cream resulted in enhanced flavors and a very moist cake. I was wondering about the nutty flavors that whole wheat will exhibit but it was not the case at all
- Banana against egg sounded better in this
