Soya bean salad.... fresh and comforting salad

Salads are perfect. A bowl of simple salad can be perfect for breakfast or a quick lunch or even for a light dinner. Me and my hubby love these simple Salads at the breakfast table. No oil and loaded with fresh ingredients make you relish every bit of it without the slightest hint of guilt






Soy is rich and full of goodness. A legume with highest protein content makes it a wonderful choice for additions to our intakes. Has amino acids too. Google it and learn about the benefits it can give

A healthy salad is what is aimed here with minimal on spices to keep the taste fresh
Serves... 2 ppl
Serve option... Room Temp

This is what u'll need....

Soya beans - 1 cup
Cucumber - 1 
Tomato - 1 medium
Onion - 1 small
Coriander leaves - a handful
Sesame seeds - 1 heaped tbspn
Watermelon/cucumber seeds - 1 tbspn
Lemon - 1/2
Pepper - a pinch
Salt to taste

Here is the stir....
  • Soak Soya beans overnight and the next morning pressure cook the beans with a dash of salr to a couple of whistles. Don't overdo it else it will end mashed up

  • Peel and chop cucumber into small pieces. Similarly chop onion and tomato too


  • Add all above to a wide mouthed bowl. Chop a handful of coriander leaves and add it to the mix. Be liberal. It tastes really good... Very fresh
  • Add the cooked soya beans to the bowl
  • Dry roast some sesame seeds and watermelon/cucumber seeds. Let it cool and attain its crispness

  • Add sesame and watermelon/cucumber seeds to the bowl
  • Sprinkle salt and pepper
  • Squeeze half a lemon or little more if you like 
  • Toss everything well to get the salt and pepper and lemon juice evenly incorporated
  • Serve fresh and enjoy your bowl of healthy and nutritious food


Note:
  • Dont overcook the beans
  • Add a little salt to the beans when cooking
  • Spoon in a tablespoon of olive oil if you like. We usually skip in ours
