Besan ladoo... one of my favorites

Besan ladoo is one of my very favorite ladoo. I am a big fan of ladoos and prefer almost any that I think of. Delicious rava ladoo, maa ladoo, dry fruits ladoo, malai ladoo, coconut ladoo and so many more. On how much I love each and every one of them

Best part about ladoos are that they are very easy to make and you can make a lot of them in very little time. I dont make it too sweet so get to enjoy more. They are perfect for an evening tea-time snack, or a simple get-together and even for festival season. They go good almost everywhere

This ladoo is very easy to make and melts in the mouth bursting into flavours of roasted besan, ghee and coarse nuts

Serves... makes 8-10 ladoos
Serve option... Room temp

This is what u'll need....

Besan / Gram Flour - 1/2 cup
Cashews - 4-5
Almonds - 4-5 + 1 for garnish
Powdered Sugar - 1/3 cup
Cardamom powder - 1/4 tspn
Ghee - 4 tbspn

Here is the stir....
  • Heat a flat non-stick pan
  • Measure in 1/2 cup of besan/gram flour into the pan
  • Dry roast the flour on low flame till it loosens the raw smell and turns slightly darker in color from what it is. Make sure you work with low flame to avoid burning the flour and retain the taste
  • Meanwhile dry roast the cashews and almonds on low flame. Cool them once done and grind coarsely - say just a couple of pulses in the mixer

  • Spoon in 2 tbspns of ghee and work it all together to blend completely. The  mixture will look crumbly in texture

  • Turn off the flame and add powdered sugar, dry fruits powder and cardamom powder to it

  • Give it a quick stir and then spoon in melted ghee 1/2 tablespoon at a time. Dont add the entire ghee at a time. If it ends up being more then it will be difficult to have the ladoos hold their shape. Add little by little and mix. Also when the sugar is added it melts to make the mixture more loose. Add just enough and mix thoroughly before checking if you need more ghee
  • The final mixture should look like a dough
  • Let cool. Pinch out a little dough and shape it into a ball. Tadaaa.... your ladoos are ready
  • Garnish with sliced almonds. Enjoy :)

Note:
  • Dry flour on low flame
  • Keep an eye on the flour all the time. It gets burnt very quickly
  • Add ghee little by little
