Mixed vegetable raita is the simplest raits that goes really well with all kinds of biryanis and pulao. Anything spicy to eat with a side of raita tastes great. We have this almost every Sunday along with non-veg curries for rice
Serve option... Chilled
This is what u'll need....
Cucumber - 1
Onion - 1
Tomato - 1
Coriander leaves for garnish
Curd - 1 cup
Salt to taste

Here is the stir....
- Peel and chop cucumber into small pieces. Add this to a wide bowl
- Chop one onion finely and toss it in with the cucumber
- Add finely chopped tomatoes
- Spoon in some salt to taste
- Add in slighly whisked curd to the chopped vegetables
- Mix it all thoroughly so that the curd and vegetables are blended well
- Chill it in the refrigerator for some time and also to avoid making it sour
- When serving, garnish it with chopped fresh coriander leaves
Note:
- Use fresh curd for a nice taste
- Taste best if had within an hour else the juices from tomato and onion change the flavours a bit and also the veggies lose their crunch
