Rice Murukku ....

Murukku is a famous traditional south-Indian snack which is called by many names - murukku, murukkulu, chakli and so on. They are a must snack on our Diwali menu. It is a very simple snack to make with just a few ingredients - rice, urad dal, chutney dal and seasoning. It is an all-time favorite in all homes and has been well entertained always

They are usually made in big batches and stored in big containers. They stay fresh for couple of weeks if stored properly

I have seen my mom, mil and grandma making this for us all the time. The aroma of this savory snack will fill the house and invite everybody to the kitchen to take quick enjoyable bites. Elders to kids and everyone one will sure enjoy

I dont have a step-by-step pictures here as I always forget to take pics when I make them. So this time I decided to post with the finished product and update with step-wise pics later... if I dont forget again ;)

This is what u'll need....

Raw rice - 2 cup
Roasted urad dal -1/4 cup
Chutney dal / Pottukadalai - 1/2 cup
Melted Butter/Oil - 4 tbspn
Black Sesame seeds -  1 tbspn
Oil for frying
Salt to taste

Here is the stir....
  • Wash and soak rice for 3-4 hours. Drain the water from rice and add it to a mixie jar. Put the lid on and grind it with very little water to a fine texture
  • Roast urad dal in a dry pan till you can get the aroma coming and the raw taste washes away. Let it cool down completely. Add it to a dry mixie jar and grind it to a very fine powder 
  • Powder pottukadalai / chutney day to a very fine powder
  • Take a working bowl and add the rice mixture to it. Follow this by 1/4 cup of urad dal powder and 1/2 cup of pottukadalai powde. Mix everything together
  • Add salt, washed and drained sesame seeds, melted butter/oil to the dry ingredients. Add water little by little and mix thoroughly to make a soft dough
  • Heat oil in a deep pan. Fill the murukku mould with a little dough. When the oil is hot gently squeeze dough into a greased flat spatula forming a murukku shape. Slide murukku into oil very gently. If you want to make it fast, grease a clean little space on your kitchen counter with little oil. Squeeze dough in murukku shapes, you can make many ahead of time. When the oil in hot, use a flat spatula to lift each murukku and slide them into oil
  • Fry the murukkus on medium flame so that they retain a little creamish color and also turn crispy. Using a slotted spoon take out the murukkus and drain them on paper towels. Repeat the above steps until the dough is done
  • When the murukkus come down to room temperature, transfer them to airtight containers and enjoy your snack

Note:
  • Fry murukkus on medium flame for the perfect crispiness and color
  • Adjust dal powders for slight taste variations or crispiness variations
