My elder one loves this vegetable not by its appearance but by the taste after its fried. He has given it a new name too... "Vegetable Fish". Its yummy, spicy and crisp to perfection. We all love it at home. My mil taught me this method to make the fry. When she makes it .... its all gone before lunch is served. They taste best when really hot and crisp

Serve option... Hot
This is what u'll need....
Yam - as needed
Sambar powder - 1 tspn
Water - 1/4 to 1/2 cup
Oil for frying
Salt to taste

Here is the stir....
- Peel off the skin from yam and clean it thoroughly to remove any dirt
- Cut it into thick slices. Usually I cut them into triangles and rectangles. It depends on the yam size and rugged shape
- Wash once again and add it to a pan
- Add salt and sambar powder to taste
- Pour half a cup of water into the pan
- Bring this mixture to a boil and cook on medium flame till the moisture almost dries up
- Let it cool or if you planning to use a fork then go ahead
- Heat a tawa and add a tspn of oil to it
- Place the slices of yam and let it cook and roast for a few minutes
- Flip and let that side brown too
- Transfer to a plate
- Serve with curd rice, lemon rice, tamarind rice or dal rice for best taste
- Add 1/4 cup water and then add more if you feel yam is not cooked through
- Roast on medium flame to get a crisp outer
