Chilli potato

My family's favourite appetizer on the vegetarian menu. We all love this. Give the entire serving bowl to my kids and they will wipe it out in not time. They wouldnt even mind skipping lunch or dinner after that ;) Its a quick and super easy appetizer so I dont mind making it either

The crunchy potatoes are so yum that you can have them any time. You can pull up the spice level high if you want to and enjoy it. My younger one eats spicy stuff but he ends up drinking up a full litre water bottle before he would finish his appetizer. So to avoid that I hit lower on the spices and let him enjoy more

This is also a very quick appetizer to make if you have sudden guests and there's nothing much you can think about. Here goes the recipe for one perfect starter






Serves... 4-6 ppl
Serve option... Hot

This is what u'll need....

Potatoes - 2-3 nos
Capsicum - 1 medium
Onion - 1 medium
Garlic cloves - 2-3 big
Green chillies - 1-2 nos
Tomato ketchup - 2 tbspn
Soya sauce - 1 tspn 
Sugar - 1 tspn
Corn flour - 1 1/2 tbspn
Red Chili powder
Oil for frying + 1 tbspn for the sauce
Salt to taste

Here is the stir....

  • Wash and peel potatoes
  • Slice them into long strips. A little thick will do good. Dont make it too thin
  • Take water in a saucepan and add a little salt to it. Bring the water to a rolling boil

  • Slide in the potato slices into the boiling water
  • Let it cook for 2-3 minutes. We need to half-cook the stuff
  • Turn off the flame and drain the water using a strainer. Let it cool
  • In a wide bowl spoon in some cornflour
  • Add some salt and red chilli powder. Remember to use less salt as we already boiled the potatoes with some salt

  • Put the potatoes in and toss it around so that all the pieces are evenly coated

  • Heat oil in a pan. Drop in a few pieces of potato. Fry it on medium-high flame for a while till gets a slight golden brown
  • Drain them on paper towels
  • Take a frying pan. Add a tablespoon of oil to it and heat it
  • Chop garlic finely and add it to hot oil
  • Thinly slice the onions and add it to the pan. Increase flame 
  • Add thinly sliced capsicum to this
  • Slit 1 or 2 green chillies and put them in
  • Sprinkle some salt and sugar

  • Pour some ketchup followed by soya sauce

  • Mix it well. Add a few tbspn of water and swirl it around
  • As the flame is on high, the water will evaporate quickly

  • Add the fried potato slices
  • Mix it all so that the sauce is evenly coated
  • Serve hot and enjoy


Note:
  • Keep an eye on salt as we are added little by little
  • Add more green chillies if you want it more spicy
  • Use springs to garnish is you have some. All my onion plants dried up this summer so didnt have any this time :)
